Roasted Cauliflower with Creamy Hummus
Simple, satisfying, and made for real life.
INGREDIENTS
CAULIFLOWER STEAK
1 large head cauliflower, cut into thick steaks
1/4c Olive oil
½ tsp smoked paprika
½ tsp garlic powder
Salt & Black pepper
CREAMY CHICKPEA HUMMUS
1 can (15 oz) chickpeas, drained and rinsed
1 lemon, zest and juice
1 small garlic clove
Salt & Black pepper
Cold water, as needed
METHOD
Preheat oven to 425°F.
Combine the smoked paprika, garlic powder, salt, black pepper, and enough olive oil to make a loose seasoning paste.
Brush the paste generously over both sides of the cauliflower steaks.
Roast for 25–30 minutes, carefully turning halfway through, until tender and deeply caramelized around the edges.
CREAMY CHICKPEA HUMMUS
Blend chickpeas, lemon zest and juice, garlic, salt and black pepper until smooth. Add cold water a little at a time until creamy.
TO SERVE
Spread the creamy hummus onto a plate. Place the roasted cauliflower steak over the hummus and serve.
WHY IT NOURISHES
Cauliflower and chickpeas make this a fiber-rich, plant-forward meal that feels hearty and satisfying. Chickpeas add plant-based protein, while cauliflower brings texture and plenty of vegetables to the plate. Lemon and garlic add bright flavor without making the dish complicated.
MAKE IT YOUR WAY
Protein: Add grilled shrimp, salmon, chicken, or a soft-cooked egg if you want extra protein.
Base: Serve with quinoa, farro, brown rice, or greens for a more substantial meal.
Flavor: Add fresh herbs, chili flakes, or a little extra lemon.
Vegetables: Use the same idea with roasted broccoli, cabbage wedges, or eggplant.
CAROLINA’S KITCHEN TIP
Roast the cauliflower until the edges are deeply golden, not just tender. That caramelization is where the flavor comes from.
Don’t rush the color.
MEAL PREP & STORAGE
Roast the cauliflower and prepare the creamy chickpea hummus ahead of time. Store them separately in airtight containers in the refrigerator for up to 3 days. Reheat the cauliflower before serving and assemble over the hummus when ready to eat.
